Job Description – Gelato Production Chef

- To lead and oversee production of gelato, related desserts as required and maintaining product standard
- To research and create new gelato flavours, gelato cake and develop new product lines
- To prepare product costing to determine food cost and propose selling price for new products in accordance with company's guideline
- To prepare SOP for production
- Manage production staff and ensure the necessary manpower is sufficient
- To suggest improvement for production processes, management and anticipating changes
- To analyze failures, malfunctions and propose improvements
- To ensure efficiency in productivity and quality of production, as well operation
- Ensure that the highest quality of ice cream/yogurt/sherbet/sorbets are produced by following established recipes and perform all required production procedures
- Conduct regular checks on team knowledge, understanding and overall practices
- To develop efficient production schedule and plan production to ensure high productivity
- To monitor daily production against forecasts and readjust them as and when required
- Maintain production housekeeping and sanitation of production equipment, ingredients' storage containers and work area
- To coordinate production and maintenance requirement for all related equipment/machinery
