Job Summary:
The Quality Food Hygiene & Safety Manager (Food & Beverage) oversees the hygiene, safety, and quality of food preparation and service within the resort. This role involves ensuring compliance with local and international food safety standards, conducting regular inspections, training staff, and implementing hygiene protocols to provide guests with a safe and enjoyable dining experience.
Job Description: 1. Food Safety Compliance:
• Ensure that all food preparation, storage, and service areas comply with local and international food safety regulations.
• Maintain up-to-date knowledge of relevant legislation and best practices in food safety.
2. Hygiene Protocols:
• Develop, implement, and monitor hygiene and sanitation protocols across all food outlets, kitchens, and storage areas.
• Conduct regular audits and inspections of food handling, storage, and service areas to ensure hygiene standards are consistently met.
3. Staff Training & Supervision:
• Train kitchen and service staff on proper food handling, hygiene practices, and safety procedures.
• Supervise staff to ensure compliance with hygiene and food safety standards.
4. Quality Control:
• Monitor the quality of food products, ensuring that they meet resort standards.
• Work closely with chefs and kitchen staff to ensure that food is prepared and presented according to quality guidelines.
5. Incident Management:
• Investigate any incidents related to food safety or hygiene, taking corrective actions as necessary.
• Report food safety issues to the General Manager and recommend solutions to prevent recurrence.
6. Documentation & Reporting:
• Maintain accurate records of food safety inspections, audits, and incidents,
• Prepare regular reports on food safety compliance and present them to management.
7. Collaboration:
• Work with the purchasing team to ensure that all suppliers meet the resort food safety standards.
• Collaborate with other departments, such as housekeeping and maintenance, to ensure overall resort hygiene.
8. Continuous Improvement:
• Stay informed about the latest trends and developments in food safety and hygiene.
• Implement new practices and technologies that improve food safety and hygiene within the resort.
Qualifications & Skills:
• Education: Degree or diploma in Food Science, Environmental Health, or a related field.
• Experience: At least 3-5 years of experience in a food safety, hygiene management, or quality assurance role, preferably within the hospitality industry.
• Certifications: HACCP (Hazard Analysis and Critical Control Points) certification or equivalent is required.
