Job Responsibilities:
Responsible for identifying the training needs for back of house and providing on-the-job training.
Execute the Career Development Program (CDP) for back of house staff and ensure timely progress.
Clearly communicate all training information and follow through on the implementation of new training policies.
Manage the Basic Operating Management Training program for the kitchen area, ensuring back of house staff are well-trained in basic product knowledge, food handling, and hygiene practices.
Plan and execute Menu Products Training to cover all regions before launching, ensuring new stock is delivered to the store on time.
Execute the Back to Basic Training program by implementing the relevant training modules.
Lead the Advance BOH Training Program to develop kitchen leaders in every store.
Back of House Performance:
Manage the inventory system for back of house.
Monitor food cost performance at the store level.
Provide guidance on Stock Projection, preparation, and Defrost Charts to outlets.
Ensure Standard Operating Procedures for BOH are appropriate for execution at the store level.
Supervise and manage head chefs to perform their duties, including conducting outlet visits and inspections using a standard checklist and responding to related departments for corrective actions.
Ensure head chefs reinforce hygiene standards in the BOH.
Review and improve kitchen workflow and setup.
Consult and implement a systematic approach to improving kitchen team productivity.
Conduct Proof of Concept (POC) for new equipment/packaging/materials/CCU to enhance kitchen operation performance.
Explore new ideas to improve kitchen operations using Kaizen concepts/Six Sigma.
Lead the implementation of 5S at kitchen stations.
Other Responsibilities:
Support new store openings for BOH operations by assigning head chefs to new outlets.
Establish standardized kitchen layout designs and review new outlet kitchen designs with the project team.
Assist and participate in any other tasks and activities as requested by superiors.
Undertake other ad-hoc tasks as required by management.
